This is a soft, cake-like cookie that has swirls of fresh, crushed pineapple and swirls of sweetened, whole milk ricotta cheese throughout. Some say it tastes like pineapple cheesecake. You be the judge. *This cookie has an additional amount of natural sugar due to the pineapple, so if you are diabetic, just be aware. Like all of our cookies, the dough is made with natural sugar substitute.
